this soup is one of our absolute favorites! i got it from a fitness magazine over 4 years ago & it has made its way into our regular dinners. it takes less than 20 minutes to make, is super healthy & super delicious! so here we go!
ingredients:
4 cups stir-fry vegetables
4 cups chicken broth {low-sodium makes it healthier}
2 tsp. cajun seasoning {you can reduce this if spicy isn't your thing}
12 oz. sliced tilapia {you can use other white fish if you like}
1 can diced tomatoes {i use the one with jalapeños for extra spiciness}
directions:
combine the stir-fry vegetables, chicken broth and cajun seasoning; bring to a boil then cover & simmer about 4 minutes. Add the tilapia {thick slices, it breaks up as it cooks} and the diced tomatoes. Cover & simmer 3 minutes. Serve!
