0 baby arugula, beet & goat cheese salad

this salad is so delicious! i'm a huge fan of goat cheese, baby arugula, walnuts & beets so combining them all together sounded like paradise to me, & it was! this salad is super easy, tasty & healthy - all you could ever ask for! p.s. this is adapted from a martha stewart recipe {i do love her recipes}. i hope you enjoy it as much as we did!


ingredients:
1/2 cup walnuts
1 tbs. finely chopped shallot
2 tbs. balsamic vinegar
2 tbs. freshly squeezed orange juice
3 tbs. olive oil
coarse salt
freshly ground pepper
1 can {15 oz} whole beets - drained & sliced in quarters
6 oz soft goat cheese, at room temperature
8 oz baby arugula


directions:
scatter the walnuts on a baking sheet & toast in the oven at 350°, tossing once, for about 10 minutes, until golden brown & fragrant. Let cool, then finely chop & set aside.

in a small bowl, whisk together the chopped shallot, vinegar, orange juice, & olive oil; season with salt & pepper. place the beets in a small bowl & pour 1/3 of the dressing over them & toss to coat.

form goat cheese into 12 balls. roll the balls in the walnuts & cover completely, gently press & flatten into disks.

place the baby arugula into a large bowl, drizzle with remaining dressing & toss to combine. divide among 2 plates & top each with beets & goat cheese disks.
