0 sometimes i'm jealous of ivan because he gets to sleep

like last night when he gets to lay in a nice warm bed, all cozy & i, i have to stay up drinking coffee, listening to first aid kit & painting . . . of course that isn't so terribly bad. a lot of nights it's drafting {mind-numbing, soul-deadening drafting - but hey! it pays} or loads of homework that just seems to pile up as "anna karenina" stares sadly at me {god, i need to finish!}. this weekend i have to somehow manage to finish up a studio project {major thing} & travel to vernal . . . i have so many other things i want to talk about, like the whole "i'm doing everything wrong & i'm a complete failure at life in general & architecture in specific" moment {only a moment people, i am far too busy to allow those self-indulgent sentiments more than a moment's time} & my BOOTS! those boots deserve a special post {when i have more time . . . tomorrow?}

0 baby arugula, beet & goat cheese salad

this salad is so delicious! i'm a huge fan of goat cheese, baby arugula, walnuts & beets so combining them all together sounded like paradise to me, & it was! this salad is super easy, tasty & healthy - all you could ever ask for! p.s. this is adapted from a martha stewart recipe {i do love her recipes}. i hope you enjoy it as much as we did!

ingredients:
1/2 cup walnuts
1 tbs. finely chopped shallot
2 tbs. balsamic vinegar
2 tbs. freshly squeezed orange juice
3 tbs. olive oil
coarse salt
freshly ground pepper
1 can {15 oz} whole beets - drained & sliced in quarters
6 oz soft goat cheese, at room temperature
8 oz baby arugula


directions:
scatter the walnuts on a baking sheet & toast in the oven at 350°, tossing once, for about 10 minutes, until golden brown & fragrant. Let cool, then finely chop & set aside.

in a small bowl, whisk together the chopped shallot, vinegar, orange juice, & olive oil; season with salt & pepper. place the beets in a small bowl & pour 1/3 of the dressing over them & toss to coat.

form goat cheese into 12 balls. roll the balls in the walnuts & cover completely, gently press & flatten into disks.

place the baby arugula into a large bowl, drizzle with remaining dressing & toss to combine. divide among 2 plates & top each with beets & goat cheese disks.

this is what we drove home in. crazy talk! then ivan decided to start a snow fight, however, travis was in no mood to freeze his hands & i had my hands full - so it was a little one-sided.

you know how i mentioned that i bought leather pants? well today they ventured out in public. i feel pretty damn sexy in them & that's always a plus. i can always go with an occasional boost of confidence. along those lines i'm pretty stoked about my "graphic self description" below! it's for a fellowship application . . . here's hoping! oh! i had a lovely lunch with a lovely girl & i'll post about that later!

0 good thing it's still the weekend

because i have a lot to do! i always have these doable unrealistic goals for the weekend & surprise, surprise i didn't realize them. so i'm pretty glad that i don't have school today so i have one more day to work on all those things i was supposed to accomplish this weekend. we shall see how much i can accomplish today! wish me luck!

here are some pictures of the weekend, it was a lot of fun! coffee with siblings, an african restaurant {always fun to eat with your hands} & dancers {as a part of a "refugees among us" presentation - which was incredible}. as well as ivan's killer omelette {he makes the best omelettes}.

2 pants!

before this morning i had two {only two people!} pair of pants that fit me. so when i went to h&m & found 3 pairs that were adorable & all together less than $30, so of course i bought them all! {as if i had a choice}. ivan's reaction to the pants . . . well . . . he likes the red ones, he's not sure how he feels about the leather ones & he laughed {audibly, uncontrollably laughed} at my floral ones. but when does a man who wears a t-shirt, boxers & socks with flip-flops get to critique my clothing? that's right, never! {to be fair he only wears said ensemble in the house}.

the fact that they're "designer" pants & were originally $349 {under the reduced $99 price} may have had some influence on my purchasing decision, but let's face it, they're sexy as hell - unlike my dirty mirror, yikes!

0 i once went to a brunch . . .

. . . where i didn't eat anything. that may seem odd, seeing how food obsessed i am & how delicious the food was {or smelt anyway}. but i'm at the tail end of my master cleanse {you may remember the last time i did this & how food crazy i got towards the end} & i held strong. ivan had 3 cups of espresso, i just held onto his cup & smelt the coffee. you may wonder where the people are in the photos, well let's just say that there were many wonderful, beautiful people there & the fact that i took absolutely no pictures of them shows how a "cleanse" alters the mind. earlier today i was thinking about how the idea of cleansing is very christian {even though i consider myself agnostic at best}. i'm doing this cleanse as a way to "repent" of all the bad eating i did over the holidays {so worth it} just as many christians repent of their sins. one may even argue that the idea of repentance makes it easier to sin. at least for me it made it easier to do some sinful eating as long as i thought "i'll be doing a cleanse in january, so it's okay."

oh bacon! love of my life! we will be reunited soon!

0 a little black & white

i finally got around to scanning the holga pictures i took over the summer. some of them are taken here in salt lake & others in europe {the half overexposed picture was taken at ivan's mother's grave site & even though i don't really believe in the supernatural i thought it was a beautiful coincidence}. the pictures have a gorgeous nostalgia to them which i find perfectly fitting for this snowy day. i don't know how the weather is where you are but here it's been snowing non-stop since yesterday & it's up to your knees {perfect coffee weather}. it's a good thing snow is beautiful, it helps you forget for just a moment how cold it is - everything looks like it's covered in clouds. when i was a kid i remember looking up at the sky when it snowed at night & imagining that i was travelling at "warp" speed.
